Specialty Menu for Chinese Patient With Renal Failure
Diagnosis: Renal failure is the slow digression of the kidneys in the body system. The disease can either be acute, or become chronic, which is more common among the elderly.
Judith Hopfer, April Hazard Vallerand, and Cynthia A. Sanoski describe in Davis's Drug Guide for Nurses how this occurs. This can result from injury or by the aging process where the kidneys begin to shut down. (Hopfer, Vallerand, Sanoski, 496). Marilynn E. Doenges, Mary Frances Moorhouse, and Alice C. Murr describe the further process in the Nurses' Pocket Guide. Renal failure is extremely dangerous for the fact that when the kidneys shut down, dangerous wastes can build up in the blood that is now not being filtered.

The only taboos present are those that are more specific to etiquette at meals, such as never leaving grains of rice on one’s plate or leaving chopsticks standing in a bowl of food. Eleanor D. Shlenker, and Joyce Gilbert talk about different food options for a Chinese patient in Williams' Essentials of Nutrition & Diet Therapy. Foods specific to the Chinese culture include white rice as a staple item, although noodles made of millet, corn, or barley are often eaten as well. Rice pudding is consumed at breakfast and topped with a wide variety of choices such as vegetables, dumplings, and sauces. Dairy is extremely limited in Chinese culture, and is often not consumed at all. However, milk from cow, buffalo, or soy is used in cooking often. Rice milk is another option and is preferred if milk is to be severed as a beverage. A challenge with creating a menu for a Chinese patient with renal failure is the fact that soy sauce, amongst other sauces, are high in sodium but often used in a lot of Chinese cooking.
