2.0 Introduction
Consumption of foods and beverages that encourages a healthy living, better health and lowering the risk of sickness has become very popular among the consumer whom are health conscious. Hence, a lot more attention is paid to different food extracts such as green tea extracts, grape seed extracts and ginger extracts as they posed excellent antimicrobial, antioxidant and anti-carcinogenic properties (Martin et al. 2009). These extracts have great potential in improving the quality and shelf life of foods by modifying the physiochemical and biological properties of the food (Martin et al. 2009).
Polyphenol (or catechins) extracted from green tea extract have shown an excellent antimicrobial effect against Bacillus Subtilis, Escherichia Coli, Proteus Vulgaris, Pseudomonas Fluorescents, Salmonella sp. and Staphylococcus Aureus (Bancirova 2010). Using green tea extracts, grape seed extracts and ginger extracts as the natural antimicrobial in fruit juices may not only able to extends the shelf life of orange juice but it also has bioactive compound that can bring many more health benefits as a bioactive compound-enriched functional food (Martin-Diana et al 2009; Almajano et al 2008; Jayaprakasha et al 2003; Ekwenye & Elegalam 2005).
