Pineapple is a tropical which is planted in many tropical countries such as Sri Lanka, Taiwan and Africa. It is known as ananas commonly where it’s scientific name is ananas comoscus and also one of the most important commercial fruitcrops in the world,known as the queen of fruits. Because it has excellent flavour and taste. Pineapple is the third mostimportant tropical fruit in the world after Banana and Citrus. They are consumed or served fresh, cooked, juicedand can be preserved. It is seasonal and highly perishable fruit(Duval et al, 2003).

Pineapple contains the enzyme bromelain (protease) which has several therapeutic properties including malignant cell growth, thrombus formation, inflammation, control of diarrhoea, dermatological and skin debridement (Tochi et al., 2008). According to Tochi et al, available evidence indicates bromelain is well absorbed orally with its therapeutic effects being enhanced in a dose dependent manner and if successfully incorporated in foods, it could become more acceptable as a nutraceutical product than it now is.
Pineapple can be used as supplementary nutritional fruitfor good personal health. Pineapple fruits are an excellentsource of vitamins and minerals. One healthy ripe pineapplefruit can supply about 16.2% of daily requirement for vitaminC [14]. Vitamin C is the body's primary water soluble antioxidant, against free radicals that attack and damagenormal cells. A powerful antioxidant, vitamin C supports theformation of collagen in bones, blood vessels, cartilage andmuscle, as well as the absorption of iron. Vitamin C alsoretards the development of urinary tract infections during pregnancy and reduces the risk of certain cancers, including86 Md. Malic acid makes up 13 percent of pineapple juice's acidic content. Malic acid is alsobeneficial for health. There has been numerous works on the utilization of waste obtained from fruit and vegetable, dairy and meat industries. In this regard, several efforts have been made in order to utilize pineapple wastes obtained from different sources. The wastes from pineapple canneries have been used as the substrate for bromelain, organic acids, ethanol, etc. since these are potential source of sugars, vitamins and growth factors. Several studies have been carried out since decades on trying to explore the possibility of using these wastes.
