Nutrition Journal Nutr J, 9(1). doi:10.1186/1475-2891-9-10 The authors of this peer-reviewed journal article discuss the differences in the nutritional profile (and flavor) in beef which result from raising the animals on pasture, in stead of grain. The article details the different fatty acid profile and antioxidant levels in beef that result from the animal’s diet and management practices uses and conclude that grass-fed beef is contains higher amounts of “cancer fighting antioxidants” and a “more desirable” saturated fatty acid (SFA) profile than beef from grain-fed animals (Daley et al, 2010). By comparing and contrasting pastured beef and dairy with conventional management systems, the author why consuming grass-fed beef and dairy products provide humans with more nutritious meat, is better for the environment and, is healthier for the animals.
