The simple, humble recipes made in their uncle's Mexican restaurant in Houston encouraged brothers, Albert and Mario Sorto, to open their own restaurant, MasFajitas 20 years ago in Caldwell. Now, their 5th Texas restaurant celebrated its grand opening in Killeen on March 13, located at 1908 E. Central Texas Expressway, the spot previously occupied by the Red Onion Indian Bistro.

“We saw an opportunity for growth due to the city's population and felt that our Mexican cuisine would fit Killeen well, since there is not an abundance of restaurants offering what we offer,” said Joe Fuentes, general manager.

More than 40 food items, plus appetizers, soups and salads and desserts, comprise the menu with traditional Mexican favorites, like enchiladas, burritos and tacos. But MasFajitas offers its own specialty foods, such as stuffed fried avocado with grilled fajita chicken, Veracruz catfish and shrimp, and steak ranchero and Pupusas, a pork and cheese stuffed tortilla. “It is all prepared fresh every day, and that is what makes our food tastes great.” Fuentes pointed out that stewed tomatoes is the only canned item used, otherwise every thing is made from scratch. Maintaining high standards and consistency in every aspect of the business are the keys to the restaurant's success and growth. “We follow the same recipes for the foods and drinks at all of our restaurants, so there is no variance,” he said.

Turning the previous Indian establishment into a Mexican restaurant in about one month was a major challenge. The Red Onion Indian Bistro closed on Feb. 5 and the MasFajitas renovations started the next day.
