Enzymes are macromolecules that act as a catalyst in order for chemical reactions to occur. Their function is highly dependent on what the structure of the enzyme because they have things called active sites that recognize specific substrates. A substrate is a molecule that fits into the active sites of enzymes so a reaction can occur. For example, sucrose (substrate) fits into sucrase (enzyme) where hydrolysis occurs consequently splitting sucrose into glucose and fructose. However, in our experiment, we used the enzyme amylase which hydrolyzes starch into simple sugars like glucose. In the experiment, we prepared seven test tubes two of which were control.     The first piece of liver tested was we submerged it in boiling water for roughly five minutes, we got a zero reaction rate after testing it because the extreme heat totally changes the structure of the enzyme no longer having the catalase enzyme but something different. We also submerged a piece of liver in a beaker of ice and was submerged for roughly 5 minutes we then tested it and got a reaction rate of about 1 and a small amount of bubbles created because the low temperature slowed down the speed the reaction could happen.
