Enzymes are proteins that act as catalysts and help chemical reactions occur everywhere in life and throughout body. A catalyst is a specific type of protein that increases the rate of a chemical reaction. In an enzyme reaction, the substance that the enzyme acts upon is called the substrate. The enzyme has a special area called the active site, which is a particular point in the substrate at which a reaction occurs. The active site has specific shapes that match up with the enzymes to cause the reactions. An example of an enzyme is catalase (the enzyme used in this lab); catalase helps break down hydrogen peroxide(2H2O2 ---- O2 + 2H2O). Why? Hydrogen peroxide is one of the most toxic chemicals. First, fill all 4 beakers with room temperature water approx. to 150mL
3. Fill the test tube numbers 1-4 with an inch of the catalase enzyme
4. Fill test tube number 5-8 with an inch of hydrogen peroxide (These will stay untouched until the end.)
5. Take test tube numbers 1-4 and place one of each inside of the 4 beakers. (Each beaker should now have one test

Turn the Bunsen Burner on medium and place 2 beakers of water on the surface.
7. Place 1 thermometer in each of the beakers of water
8. Take test tube number 1 and put it in beaker number 1, on the burner.
9. Take test tube number 2 and put it in beaker number 2, on the burner.
10. Monitor the temperature of test tube number 2.
(The water must stay at 70oC take on and off burner as needed)
11. Test tube number 2 needs to be at a boiling temperature.
12. Once the water is correct, let both test tubes 1 and 2 sit for 14 minutes.
NOTE: At this point you should have test tube numbers 3-8 left.
13. Take test tube number 3 and place it in beaker number 3 which should be still room temperature. Let sit for 14 minutes.
14. Fill beaker number 4 with ice.
15. Take test tube number 4 and place it in beaker number 4. Let sit for 14 minutes.
16. When test tubes 1-4 have been sitting for 14 minutes, take the hydrogen peroxide test tubes 5-8 and pour them into test tubes 1-4. (Test tube 5 with Test tube 1, Test tube 6 with test tube 2, etc.)
17. Please do this one by one and measure in cm how high the foam rises at its highest peak; Record your data.
