When we eat out or consume food we often don 't consider that there may be a risk of contracting illnesses and diseases. As consumers though, we should give this consideration as it’s a very real possibility. Escherichia coli is a natural anaerobic bacteria found in the intestines of animals and humans. However, there are other forms of this bacteria that can cause infections and disease (Laupland et al., 2008).The infectious bacteria can become a food borne pathogen that can cause serious illness in humans who consume tainted food or are exposed to the bacteria in their environment. This bacteria is found in bovine food products, some fresh produce, and contaminated water sources that have been exposed to …show more content…
While all humans are at risk of contracting the E. coli bacterium that causes serious Illnesses, there are certain groups that are at a higher risk of contracting E. coli diseases (Pitout et al., 2005). The groups considered to be at the highest risks are the very young and the elderly. These groups are at risk due to their resistances to cefazolin, ampicillin, trimethoprim-sulphamethoxazole, gentamicin, ciprofloxacin, and ceftriaxone increases (Pitout et al., 2005). With increased age, people become more susceptible to contracting the illnesses. With the very young, their immune systems are not fully developed to fight off this bacterium (Laupland et al., 2008). Another group of people that are at risk to contract this disease are those whose immune systems are weakened, those who eat undercooked foods such as hamburger meats, unpasteurized milk, apple juice or cheeses that are made from unpasteurized milk, and those whose levels of stomach acid have decreased United States (Department of Agriculture Food Safety and Inspection Service, …show more content…
coli are higher in countries where the populations are exposed to contaminated environments and the resources needed to provide cleaner environment are scarce (Stein, n.d). According to research that included information from the WHO, and included 21 countries, it is estimated the incidences of E. coli illnesses are 2,801,000 annual acute cases each year. Included in this number are the 230 deaths that occur annually from E. coli (Majowicz at al., 2014). According to the World Health Organization information E. coli is prevalent in Argentina and there are noted cases in Europe and Norway (Stein, n.d). It is vital that when outbreaks occur that health authorities are notified and the information is shared with any outlying regions or areas close. This allows for early intervention, notification to the public, and opportunities to document the cases that are occurring. Food safety notifications of infected meats, vegetables, and store bought products can add to the preventive measures which can lessen the cases of E. coli. (Reilly, 1998). The New England Journal of Medicine states that around 60 deaths and somewhere near 73,000 illnesses connected to E. coli bacteria occurs annually in the United States. (Crump et al.,
