Celiac Disease Many would say that we live in a world where food is not only a necessity but can ultimately become your “silent” best friend. However; for some, it can be quite a tedious experiences especially when a person is limited to what he or she can eat. How might this be? Well, let’s take a look at Celiac Disease. What exactly is Celiac Disease? According to NIH, “Celiac Disease is an immune disorder in which a person cannot tolerate gluten causing it to damage the inner lining of the small intestine” (2014). Gluten is a protein that is commonly found in wheat, rye, and barley. When a person easts foods or use products that contain gluten, the immune system tends to damage or destroy the villi. Without healthy villi, a person then becomes malnourished. The cause is not yet known, but the chances of developing Celiac Disease increases with genetics that are passed down from the parent to the child and is predominately common in Caucasians and females (NIH, 2014). …show more content…
A few signs and symptoms are abdominal pain and bloating, malnutrition, swelling, chronic diarrhea, acid reflux, unexplained weight loss or gain and Dermatitis Herpetiformis. Some people show no signs or symptoms; however, the can still develop complications over time. “The elapsed time from the onset of symptoms to Celiac Disease diagnosis averages 10 years in the U.S.” (celiac.org, 2015). It can be diagnosed by a positive celiac panel blood test, a positive small bowel biopsy or a remission of symptoms on a gluten-free
