Roman Asparagus starts with blanching the asparagus stalks. They go into a baking dish with balsamic vinegar, Parmesan cheese and strips of prosciutto ham. It finishes under the broiler.

1 1/2 cups fresh peas
3 hard-cooked eggs
2 stalks celery
1 small cucumber 3 sweet pickles
1/2 cup walnuts
Salad dressing or mayonnaise
Chop eggs, celery, cucumber and pickles. Combine with peas and walnuts, using enough dressing to moisten. Makes four servings.
Mushroom casserole
12 slices bread
Butter
1 pound fresh mushrooms
3 to 4 scallions, chopped
1/2 cup mayonnaise
2 eggs
1 cup milk
1 1/2 cups white sauce
Cut crusts off bread; butter and cut into 1-inch cubes. Place half of bread in buttered 9-by-13-inch baking dish. Slice mushrooms; saute in butter. Stir in scallions and mayonnaise; mix and pour over bread. Top with remaining bread.
Mix eggs and milk; pour over bread. Cover and refrigerate overnight.
Remove from refrigerator and bring to room temperature. Heat oven to 325 degrees. Make white sauce; pour over casserole. Bake at 325 degrees for one
