I walked into Jeanette Lener’s house with pencil and paper in hand and was welcomed into the house by the sound of her dog, Wookie, barking. Jeanette greeted me at the door dressed casually in a red T-shirt and blue jeans with her long brown hair worn down. Seeing her now, she does not look like a person who had to change their diet because of an intolerance to food, but then again who does? A few years ago, Jeanette had to find out how much more difficult it is to get the nutrients you need when you have a food intolerance. About five years ago Jeanette realized she could not have white sugar or pork. Eighteen years before that she found out she couldn’t eat seafood, so Jeanette is no stranger to having to cut out a food for her diet. However, …show more content…
She says “I didn’t really like it to begin with, so it’s not too hard to cut seafood out of my diet.” Another reason Jeanette doesn’t miss seafood is because seafood can be expensive. When Jeanette eats seafood she will start to feel sick to her stomach. Since finding out she has an intolerance to seafood, Jeanette has learned what foods to use as a substitute to seafood and how to cope with the challenge of not eating seafood. Jeanette tends to substitute seafood with other meats such as chicken and beef. For Jeanette the most challenging part about not eating seafood is when someone else cooks dinner and they include seafood, because she must choose to eat something different and watch everyone else eat the …show more content…
When Jeanette eats anything that has white sugar in it she gets a migraine. Excluding white sugar from her diet takes a lot of effort for Jeanette. Jeanette has many challenges with not eating white sugar and has had to find substitutes for many different foods.
One of the biggest difficulties that Jeanette has to face with white sugar is not being able to eat chocolate. Jeanette says “chocolate was my stress reliever. If I was having a bad day I would have chocolate. If I was having a good day I would have chocolate. If I was stressed I would have chocolate.” I couldn’t imagine going without chocolate and I definitely couldn’t imagine going without sugar.
Another difficulty Jeanette faces because of her intolerance to white sugar is what she is able to drink. She is no longer able to have juice, pop, lemonade, or sweet tea. This is difficult for Jeanette, because she used to drink sweet tea quite frequently. Now Jeanette substitutes sugary drinks with water, unsweetened tea, and black tea. Jeanette now drinks about six to eight glasses of water per day, and on good days about eight to twelve glasses. The surprising thing about that is that Jeanette does not enjoy water, even though water is one of the few things she is able to drink. She says “I don’t really like the
