Red wine is one of the many types of alcoholic beverage and is characterized by the distinct dark red color from the dark red grapes it is made from. Red wine is said to deliver health benefits when consumed in moderate amounts consistently. The health benefits are results of the antioxidants that are present in red wine. These health benefits are unique to red wine because grapes are healthy fruits that contain numerous nutrients and antioxidants. These positive properties of grapes are extracted into red wine from the winemaking process. Red wine can be part of everyday life and is a healthy beverage if consumed in moderate amounts.

The process of red-winemaking reveals the raw material involved and any by-products that may be created during the process. Ripped grades are harvested and its pulps are fermented along with its skin and yeast. Over a week’s of fermentation yeast reacts with the sugar within the grapes and convert the sugar into ethanol and carbon dioxide. Carbon dioxide is lost to the atmosphere and ethanol remains. After fermentation, malo-lactic conversion takes place, the malic acid found in grapes is converted by bacteria to lactic acid (Myers, 2014). Grapes are responsible for many of the known health benefits of red wine because grapes contain antioxidants such as resveratrol, quercetin, and procyanidins. Quercetin is mostly known to manage inflammatory diseases. It is one of the most abundant antioxidants that is naturally occurring in most diets and therefore is investigated extensively. Askari et al performed a clinical trial to investigate the relationship between quercetin intake and inflammatory biomarkers and oxidative stress. Participants were healthy individual who participates in regular exercise. Participants underwent an eight week clinical trial of taking quercetin supplements and their IL-6, CRP, E-selectin and F2-isoprostane levels were measured because and after quercetin intake. IL-6, CRP, and E-selectin are markers of inflammatory disease and F2-isoprostane is a marker to measure oxidative stress. Results showed that quercetin supplements taken in conjunction with vitamin C were able to reduce biomarkers for IL-6, CRP, and E-selectin and showed positive effects in reducing oxidative stress. The study showed when quercetin supplements were taken alone, the results were insignificant, and therefore the benefits from quercetin obtained drinking red wine alone may not be significant. (Gholamreza Askari, 2012) However, because of the small sample size of the study, the results may not be very conclusive. In test tube studies, quercetin shows to be effective in preventing the release of histamines from cells and thus is effective for suppressing symptoms
